  • 20 oz ground turkey
  • 1 tsp vegetable oil
  • 1 1/4 cups chopped onions
  • 3 cloves garlic, chopped
  • 1 tbsp chili powder
  • 2 tsps ground oregano
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp ground red pepper
  • 2 1/4 cups water
  • 4 oz prunes, pitted and chopped
  • 15 oz black beans, undrained

Directions

  • Cook turkey in a large non-stick skillet over medium-high heat until browned, stirring to crumble. Drain in a colander.
  • Heat oil in the skillet over medium heat. Add onions and garlic, and sauté 7 minutes. Add chili powder, oregano, cumin, salt, and red pepper. Cook 1 minute.
  • Return turkey to the skillet, stir in 1 1/4 cups water (wine, stock), prunes (or raisins) and beans. Bring to a boil, reduce heat, and simmer, uncovered, for 5 minutes.
  • Serve over rice if desired.
