Turkey and Vegetable Stir Fry

This delectable gobbler stir fry is a healthy twist on a favorite meal.

Ingredients

  • 1 tsp black pepper
  • 2 tbsps olive oil
  • 3 1/2 2 oz servings smoked turkey sausage, diced
  • 2 cups asparagus
  • 2 cups chopped broccoli
  • 2 cups cauliflower
  • 3 tsps garlic
  • 1 cup pieces or slices mushrooms
  • 1 cup chopped onion
  • 1/2 cup chopped red pepper
  • 1/2 cup chopped orange bell pepper
  • 3/4 large yellow pepper
  • 1/4 cup water

Directions

  • In a large sauté or fry pan, heat a tablespoon of olive oil and add the chopped turkey sausage (1/2 package), brown.
  • Add onion, garlic and pepper. Cook until onions aldente.
  • Add a tablespoon of olive oil, heat and add vegetables, and then water and seasoning salt.
  • Cover and steam vegetables until bright in color, with some crisp left in them.
  • Stir and enjoy!
  • Note: you can easily add other vegetables to your liking and a bit of Italian seasoning or other spices if you like.
