  • 1/2 tsp cayenne pepper
  • 1 1/2 tsps granulated garlic
  • 4 tsps ground cumin
  • 5 tbsps tomato paste
  • 1 raw medium vidalia onion
  • 3 tbsps extra virgin olive oil
  • 2 1/4 cups diced tomatoes and green chilies
  • 28 oz 93% fat-free ground turkey
  • 3 1/2 cups black beans with olive oil, onion and garlic
  • 1 large green bell pepper
  • 1 1/3 cups sweet white corn
  • 1/2 cup chili powder
  • 1/2 cup onion powder
  • 1 cup chopped zucchini

Directions

  • Chop vegetables.
  • Sauté onion with olive oil in a pot until fragrant.
  • Add ground turkey and cook until color turns white while stirring.
  • Gradually add vegetables, tomato paste, seasonings, and water (as needed to achieve desired consistency).
  • Simmer for 30 minutes over low heat.
