Turkey Sausage & Spinach Quiche

- 4 large egg whites
- 2 large eggs
- 1/4 cup shredded reduced fat cheddar cheese
- 1/3 cup low fat cottage cheese
- 1/2 cup skim milk
- 1 package frozen spinach, drained
- 5 oz turkey breakfast sausage
- 1 dash salt
- 1 dash black pepper
- 1 crust, single 9" pie crust
Directions
- Cook crust to manufacturer's directions. Cool before pouring mixture into it.
- Preheat oven to 425 °F (210 °C).
- Beat eggs, cottage cheese, shredded cheddar, milk, cooked sausage, and spinach together. Add in salt and pepper to taste.
- Pour over cooled crust and place in oven.
- Bake for 15 minutes at 425 °F.
- Reduce temperature to 370 °F (190 °C). and bake quiche for another 20 minutes until middle is firm.
