Ingredients

  • 1 1/2 cups cabbage, shredded
  • 1 1/2 cups English cucumber
  • 1 1/2 cups carrots, sliced
  • 1 1/2 cups broccoli, chopped
  • 1 1/2 cups black beans
  • 3 1/2 tbsps apple cider vinegar
  • 7 tbsps extra virgin olive oil

Directions

  • Shred or chop all vegetables and mix in a large bowl.
  • Drain and rinse black beans, add to vegetables.
  • Blend vinegar and olive oil and add to salad. Mix well.
  • Serve fresh or keeps well refrigerated for several days.
