Ingredients

  • 1/2 tsp olive oil
  • 1 tsp vegetable bouillon
  • 1 medium onion, chopped
  • 14 1/2 oz stewed tomatoes
  • 15 1/2 oz great northern beans, drained
  • 15 1/2 oz red kidney beans, drained

Directions

  • In large saucepan, heat onion with a little olive oil until tender.
  • Stir in beans, tomatoes and bouillon. Bring to boil.
  • Reduce heat; simmer uncovered 10 minutes, stirring occasionally.
  • Note: if you are allowed meat, this recipe works very well with chicken added.
