Ingredients

  • 3 cups spinach
  • 1 cup chopped red bell pepper
  • 1 tbsp extra virgin olive oil
  • 1 tsp garlic
  • 1 tsp lemon juice
  • 2 tbsps feta cheese

Directions

  • Heat oil in a large skillet over medium-high heat.
  • Add peppers and sauté for 1 minute, turn heat down to medium and continue sautéing for 3 minutes.
  • Add garlic and lemon juice sauté for 30 seconds to 1 minute.
  • Add spinach. Sauté until all the spinach has wilted.
  • Off heat and stir in feta. Serve immediately.
