- 1 cup wheat berries
- 1 cup kidney beans
- 1/2 cucumber
- 3 large green onions
- 1/4 cup dried cranberries
- 1/2 cup sunflower seeds
- 1/2 cup lemon juice
- 1 tbsp grapeseed oil
- 1 tbsp balsamic vinegar
- 1/4 cup cilantro
- 1 cup chopped red pepper
- 1 cup parsley
- 3 tbsps fresh mint
- 1 tbsp salt
- 1 tbsp pepper
Directions
- Chop vegetables into little squares.
- Chop spices coarsely.
