A quick and easy meal that's a nice change from beef chili.

Ingredients

  • 1/2 tsp cayenne pepper
  • 1/4 cup cilantro
  • 4 oz reduced fat pepper jack cheese, shredded
  • 1 tsp ground cumin
  • 4 oz green chilies
  • 14 1/2 oz chicken broth, low sodium
  • 2 cups cannellini beans
  • 1 small onion, chopped
  • 1 tbsp olive oil
  • 3 breasts, bone and skin removed chicken breast

Directions

  • Cook chicken and onion in olive oil until chicken is cooked through.
  • Stir in beans, broth, chilies, cumin and cayenne pepper.
  • Bring to boil. Reduce heat to medium-low and simmer for about 15 - 20 minutes.
  • Serve topped with shredded cheese and cilantro.
  • Enjoy!
