- 1/4 cup olive oil
- 1/2 cup whole ultra-filtered milk
- 1 slice white bread
- 2 medium onions
- 1 large egg
- 3 tbsps unsalted sweet butter
- 18 oz rockfish
- 1/2 cup traditional panko bread crumbs
Directions
- Soak white bread in a bowl with milk.
- Grind fish with onions and wet bread.
- Add egg and season to taste.
- Form cakes and roll in breadcrumbs.
- Heat olive oil and butter in a pan. Fry the cakes on both sides for 2-3 minutes over medium heat.
