Whole Wheat Pumpkin Muffins

  • 1/4 tsp salt
  • 1/4 tsp baking soda
  • 3/4 cup non-fat milk
  • 2 tbsps margarine
  • 1/2 cup pumpkin
  • 1 large egg
  • 1 tsp pumpkin pie spice
  • 2 tsps baking powder
  • 45 g sugar
  • 3/4 cup whole wheat flour
  • 1 cup all purpose flour

Directions

  • Mix together dry ingredients.
  • Make a well in center of dry mixture.
  • Blend together wet ingredients mix into dry, mix will be lumpy.
  • Spoon into prepared muffin cups bake at 375 °F (190 °C) for 15-18 minutes.
  • Cool for 5 minutes and remove.
