Ingredients

  • 1 tsp nutmeg
  • 2 cubes chicken bouillon
  • 1/2 cup chopped onion
  • 16 oz butternut squash

Directions

  • Sauté 1/2 onion in cooking spray, like Pam.
  • Peel and seed butternut squash, cut into 1" cubes.
  • Add 6 cups chicken stock, boil until squash is soft.
  • Blend with a blender until smooth.
  • Add salt, pepper and nutmeg to taste.
