Ingredients

  • 2 tbsps olive oil
  • 8 oz asparagus
  • 1 medium scallion or spring onion
  • 48 oz boneless skinless chicken breasts
  • 1 tsp thyme
  • 1 dash salt
  • 1/4 tsp ground black pepper
  • 12 oz, dry, yields ziti
  • 2 tbsps lemon juice (canned or bottled)
  • 1/4 cup shaved parmesan cheese

Directions

  • Heat oil in a medium skillet. Stir fry asparagus and scallions for 2 minutes. Add chicken and sprinkle with half of thyme. Season with salt and pepper, cover, and simmer over low heat until cooked through.
  • Cook ziti according to package instructions.
  • Toss the chicken mixture, ziti, lemon juice, and remaining thyme.
  • Serve with shaved parmesan cheese.
