  • 1 cup chopped zucchini
  • 2 medium potatoes
  • 2 cubes stock
  • 1 cup chopped onion
  • 4 cups water
  • 1 tsp sunflower oil

Directions

  • Heat the oil in a large pan.
  • Add the onions and brown.
  • Add the water and stock cubes and stir until dissolved.
  • Add the potato and zucchini and bring to the boil for 20 minutes or until soft.
  • Blend the soup and serve.
