  • 1 small onion
  • 1 clove garlic
  • 4 medium zucchini
  • 2 tsps olive oil
  • 1 cube bouillon cubes
  • 4 cups water

Directions

  • In a non-stick saucepan heat oil over medium-high heat.
  • Add garlic, onion and cook 5 minutes or until softened and starting to brown.
  • Cut zucchinis in large chunks and add to pan.
  • Sauté zucchinis for 5 minutes.
  • Add water and bouillon cube.
  • Simmer for 20 minutes.
  • Put through blender.
