INGREDIENTS

1 english cucumber, seeded and cut into strips
12 round rice paper wrappers
6 smoked salmon slices
1 avocado, thinly sliced
2-3 cups raw sprouts or cooked vermicelli
miso sesame dressing or fish sauce vinaigrette, to dip

INSTRUCTIONS

1. Submerge a rice paper wrapper in hot tap water for 10-15 seconds. Once softened, place it on a plate or cutting board—it will continue to soften as you prep the roll.
2. Layer your desired fillings: avocado, smoked salmon, cucumbers, sprouts, or noodles. Get creative and mix combinations you love.
3. Fold the bottom of the wrapper over the fillings, tuck in the sides, and roll tightly. Repeat for as many rolls as you need. Dip in miso sesame dressing or fish sauce vinaigrette and enjoy!
