2 teaspoons reduced-fat cream cheese
2 large eggs
1 ounce smoked salmon, chopped
1 scallion, sliced
1 teaspoon capers, rinsed

INSTRUCTIONS

2. Add the cream cheese, scallions, capers, and smoked salmon, and mix them in.
3. Put some cooking spray on a small nonstick pan and set it on medium heat. It will take about 3 minutes of stirring often while you cook the egg mixture until it is scrambled.
