INGREDIENTS
200g chargrilled vegetables
400g gnocchi
a handful of basil leaves
2 tbsp red pesto
parmesan or pecorino (or vegetarian alternative), to serve
INSTRUCTIONS
1. Bring a large pan of salted water to a boil. Add the gnocchi and cook for 2 minutes or until they float to the surface. Drain and return to the pan with a splash of reserved cooking water.
2. Stir in the chargrilled vegetables, chopped if large, along with the red pesto and basil leaves. Serve with shavings of Parmesan, pecorino, or a vegetarian alternative.
