Say hello to savory perfection with Spinach Pie! Flaky layers of golden pastry wrap around a delicious filling of tender spinach, creamy cheese, and herbs. INGREDIENTS
1 cup cottage cheese
1/4 cup grated Parmesan
1/8 tsp nutmeg
1 sheet puff pastry
1 lb. frozen chopped spinach
1 yellow onion
1 clove garlic
1 Tbsp olive oil
1/2 tsp salt
1/4 tsp freshly cracked black pepper
3 large eggs, divided
INSTRUCTIONS
1. Remove the puff pastry and spinach ahead of time to defrost (spinach may be thawed rapidly in the microwave, but not the puff pastry). Preheat the oven to 375ºF.
2. Slice onion and mince garlic. In a skillet, sauté onion, garlic, and olive oil over medium heat until tender and transparent. Allow onions and garlic to cool.
3. Mix the cottage cheese, Parmesan, nutmeg, salt, pepper, and two eggs in a bowl. Reserve the third egg to brush on the pastry before baking.
4. Squeeze thawed spinach to remove excess water. In the bowl of the cheese mixture, add the strained spinach and the sautéed onion and garlic. Repeat mixing.
5. On a parchment paper or lightly floured surface, roll out thawed puff pastry to a slightly bigger size of 10×10 inches.
6. Wrap rolled pastry dough around a pie plate.
7. Fold the pastry dough corners toward the center after spreading spinach and cheese inside.
8. Brush the remaining egg on the pastry dough after lightly whisking it. Bake the spinach pie until the pasty top puffs up and turns golden brown, about 45 minutes.
9. Let the spinach pie cool for five minutes, then slice into eight pieces and serve.
