INGREDIENTS
2-3 cups water
12 oz (340 g) crushed tomatoes
3 tbsp extra virgin olive oil
1 medium onion finely chopped
1 garlic clove minced
1 ¼ cup dry orzo
1 tsp oregano
2 tsp chopped parsley
1 oz (30 g) feta crumbled or grated for serving
Salt and Pepper

INSTRUCTIONS
1. Heat olive oil in a deep pan and sauté the onion until translucent, about 5 minutes. Add garlic and cook for 1 minute. Add orzo and stir to coat in oil. Mix in tomato, 1 ½ cups hot water, oregano, salt, and pepper. Cover and simmer for 12-15 minutes, stirring occasionally and adding water as needed.
2. The orzo should be slightly liquid with a risotto-like texture. Cover and let it rest for 5 minutes. Serve in a shallow bowl topped with feta, parsley, oregano, and black pepper.
