INGREDIENTS
1 teaspoon sesame oil
3 tablespoons canola oil
1 lb. chicken(455g), ground
¼ cup green onion(35g), thinly sliced
1 tablespoon ginger, minced
¼ cup panko breadcrumbs(10g), if needed to form meatballs
sesame seed, to garnish
For the soy glaze:
¼ cup sake(60mL)
1 cup soy sauce(235mL)
¼ cup rice vinegar(60mL)
¼ cup sugar(50g)
INSTRUCTIONS
1. Cook the glaze ingredients in a pot until sticky and shiny. In a bowl, combine ground chicken, green onions, ginger, sesame oil, and ¼ cup soy glaze.
2. If the mixture does not keep its shape, add panko breadcrumbs and re-roll the meatballs. Roll meatballs and skewer 3-4 at a time. Repeat with the remaining mixture.
3. Heat the oil in a pan, then cook the skewers for 5 minutes, spraying with glaze and flipping every minute. Cook for a further 5 minutes, brushing with glaze as needed. Cool and serve.
