- 1 cup packed brown sugar
- 1 cup sugar
- 2 sticks butter
- 2 large eggs
- 2 cups shredded coconut
- 2 cups flour
- 2 cups oatmeal
- 2 tsps baking powder
- 1 tsp baking soda
- 1 dash salt
- 1 cup chopped pecans
- 8 oz dates, chopped
Directions
- Preheat oven to 325 °F (160 °C).
- Cream sugars and butter until fluffy.
- Add eggs and mix well.
- Add remaining ingredients and mix.
- Line cookie sheet with baking parchment.
- Drop by teaspoon-ful on parchment.
- Flatten.
- Bake at 325 °F for 10 - 12 minutes.
