- 4 lean Italian sausage links
- 1 medium zucchini
- 4 oz mushrooms
- 1 medium red pepper
- 1/4 medium red onion
- 32 oz egg substitute
- 1/2 cup sliced pepperoni
- 2 cups shredded mozzarella cheese
Directions
- Preheat oven to 400 °F (200 °C).
- Brown the Italian sausage.
- Slice and chop the vegetables.
- Spread the Italian sausage on the bottom of a 9x11" baking pan. Layer the vegetables on top, then the mozzarella cheese and pepperoni. Lastly pour in the egg substitute.
- Bake for 60 to 75 minutes until an inserted knife comes out clean.
