Keto Avocado Chicken Salad

Makes 6 servings as a side dish

For the avocado chicken salad:

1 cup corn, from 1 cooked cob
6 oz lean bacon, cooked and chopped
1/4 cup Chives , (or green onion), chopped
2 Tbsp Dill, chopped, or to taste
2 large cooked chicken breasts, shredded or chopped
2 large avocados

For the lemon dressing:

3 Tbsp extra virgin olive oil
1 tsp sea salt, or to taste
3 Tbsp lemon juice, freshly squeezed
1/8 tsp black pepper


1. Place the two large cooked chicken breasts in a large mixing bowl after they have been diced or shred. Add the two large avocados, peeled and pitted, to the mixing bowl and cut into bite-sized pieces.
2. Toss in 1/4 cup chopped green onion, chopped bacon, and 2 Tbsp fresh dill. Add 1 cup cooked corn (freshly cooked corn is excellent).
3. In a small dish, combine the dressing ingredients and swirl to mix. Over your salad, drizzle, and toss to mix. If preferred, present with slices of hard-boiled egg.
