Ingredients

  • 2 tbsps 2% fat milk
  • 6 large eggs
  • 1/4 medium red bell pepper
  • 1/2 cup cooked kale (from frozen)
  • 18 g vidalia sweet onion
  • 3 tsps 100% grated parmesan cheese

Directions

  • Pre-heat oven at 375°F.
  • Chop vegetables.
  • Beat eggs and milk in a bowl. Add vegetables and cheese.
  • Pour about 2/3 full into lined or sprayed cupcake tins.
  • Cook in the oven for 15 minutes or until eggs are set.
  • Can be frozen for future meals if desired.
