Ingredients
- 2 tbsps 2% fat milk
- 6 large eggs
- 1/4 medium red bell pepper
- 1/2 cup cooked kale (from frozen)
- 18 g vidalia sweet onion
- 3 tsps 100% grated parmesan cheese
Directions
- Pre-heat oven at 375°F.
- Chop vegetables.
- Beat eggs and milk in a bowl. Add vegetables and cheese.
- Pour about 2/3 full into lined or sprayed cupcake tins.
- Cook in the oven for 15 minutes or until eggs are set.
- Can be frozen for future meals if desired.
