Like a Denver omelet, but scrambled eggs.

Ingredients

  • 4 large eggs
  • 2 stalks green onion
  • 1/4 large yellow pepper
  • 1 oz ham
  • 1/4 cup shredded colby & monterey jack cheese
  • 1/3 tbsp low fat margarine

Directions

  • Dice pepper, onion, and ham.
  • Scramble eggs in bowl.
  • Heat frying pan and add teaspoon of margarine/spray.
  • Pour in eggs, wait until they cook a bit, then sprinkle ham, pepper, onion, and cheese in (in that order).
  • Mix ingredients, chopping eggs as you go.
  • Cook until eggs are done through.
  • Serve (with toast if you want) and enjoy!
