Creamy Vegetable Pasta

  • 4 cups whole wheat spaghetti
  • 4 oz low fat cream cheese
  • 1/2 cup fat free milk
  • 6 oz crimini mushrooms
  • 1 cup chopped red pepper
  • 1 cup sliced zucchini
  • 4 tbsps parmesan cheese
  • 1 tbsp extra virgin olive oil
  • 1/4 tsp salt
  • 1/2 tsp leaves oregano

Directions

  • Heat oil on low-medium flame in a medium sauce pan.
  • Add mushrooms, red pepper and zucchini.
  • Cook till vegetables are tender, stirring occasionally.
  • Lower temperature and add cream cheese, milk, oregano and salt.
  • Stir frequently till cream cheese is melted.
  • Add parmesan and pasta.
  • Serve hot.
