- 1 cup low-fat cottage cheese
- 340 g baby bell peppers
- 1/2 cup chopped red onions
- 3/4 cup non-fat plain greek yogurt
- 900 g skinless chicken breast
- 2 tbsps lemon juice (canned or bottled)
- 3 tsps ranch seasoning & salad dressing mix
- 3 stalks medium celery
Directions
- Season the chicken as desired then boil in water until color turns white.
- Shred the chicken and chop the vegetables.
- Mix everything in a bowl. Refrigerate before serving.
