  • 1 cup low-fat cottage cheese
  • 340 g baby bell peppers
  • 1/2 cup chopped red onions
  • 3/4 cup non-fat plain greek yogurt
  • 900 g skinless chicken breast
  • 2 tbsps lemon juice (canned or bottled)
  • 3 tsps ranch seasoning & salad dressing mix
  • 3 stalks medium celery

Directions

  • Season the chicken as desired then boil in water until color turns white.
  • Shred the chicken and chop the vegetables.
  • Mix everything in a bowl. Refrigerate before serving.
