Ingredients

  • 2 tsps olive oil
  • 3/4 cup chopped onion
  • 1 clove garlic
  • 1 stalk large celery
  • 1 potato
  • 4 cups chopped broccoli
  • 2 cups chicken broth
  • 1 1/2 cups skim milk

Directions

  • Let milk warm to room temperature.
  • Heat oil on medium heat in a large pot. Sauté onion, garlic, and celery until softened (about 5 minutes).
  • Add potato and broccoli. Then add broth and milk.
  • Bring to a boil, then reduce heat, cover and simmer for 20 minutes.
  • If you prefer a smoother soup, process slightly cooled soup in batches in a food processor.
