Ingredients
- 2 tsps olive oil
- 3/4 cup chopped onion
- 1 clove garlic
- 1 stalk large celery
- 1 potato
- 4 cups chopped broccoli
- 2 cups chicken broth
- 1 1/2 cups skim milk
Directions
- Let milk warm to room temperature.
- Heat oil on medium heat in a large pot. Sauté onion, garlic, and celery until softened (about 5 minutes).
- Add potato and broccoli. Then add broth and milk.
- Bring to a boil, then reduce heat, cover and simmer for 20 minutes.
- If you prefer a smoother soup, process slightly cooled soup in batches in a food processor.
