Ingredients

  • 2 cups long grain white rice
  • 4 cups chicken stock
  • 1 cup frozen peas and carrots, thawed
  • 1 tsp minced garlic
  • 2 stalks green onions
  • 2 tbsps soy sauce
  • 4 large eggs
  • 1/3 second spray butter cooking spray
  • 16 oz boneless skinless chicken breast

Directions

  • Cut up the chicken and stir-fry until no longer pink; set aside.
  • Finely chop the green onions (including green stems) and set aside.
  • Scramble the eggs in a small skillet and set aside.
  • Bring the chicken broth to a boil in a large skillet.
  • Add the soy sauce, garlic and rice.
  • Stir, cover and reduce heat. Simmer for 20 minutes.
  • Quickly add the chicken, peas and carrots, and egg to the rice.
  • Cover for another 10 minutes or until the rice is cooked and soft.
