Mediterranean White Bean Soup

Tasty white bean and tomato soup with rosemary, garlic, parsley and red wine vinegar.

  • 1 tsp black pepper
  • 2 tsps salt
  • 3 tbsp red wine vinegar
  • 1/4 cup parsley
  • 1 cup chopped or sliced tomatoes
  • 1/4 cup olive oil
  • 7 cups water
  • 8 cloves garlic
  • 1 tsp rosemary
  • 1 cup white beans

Directions

  • Rinse, pick over and soak the beans overnight in water. Drain.
  • Sauté garlic and rosemary in oil until onions translucent.
  • Add water and beans. Bring to a boil and simmer for 1 1/2 hours.
  • Add tomatoes, parsley, red wine vinegar, salt and pepper and heat through while stirring.
