I made this soup using leftovers from chicken tacos, which is so yummy.

Ingredients

  • 42 oz chicken broth
  • 14 oz water
  • 1 breast, bone and skin removed chicken breast
  • 2 tsps cayenne pepper
  • 1 cup salsa
  • 2 tsps black pepper
  • 4 cloves garlic
  • 2 tsps chili powder
  • 14 oz corn
  • 14 oz pinto beans
  • 2 dashes salt
  • 3 oz fat free cheese, shredded

Directions

  • Add half of the liquid (water and broth), chicken, spices, and garlic to a pot. Simmer until the chicken is cooked all the way through.
  • Remove chicken from broth and shred.
  • Add the remainder of the liquid, shredded chicken, salsa, corn, and beans to the pot.
  • Simmer for about 20 minutes to let flavors emerge.
  • Serve with cheese sprinkled on top.
