INGREDIENTS
1/2 teaspoon pepper
1/4 teaspoon salt
2 cans (14-1/2 ounces each) diced tomatoes, undrained1 tablespoon olive oil
1 medium onion, finely chopped
3 garlic cloves, minced
1 teaspoon dried oregano
1/4 cup white wine, optional
1 pound uncooked shrimp (31-40 per pound), peeled and deveined
2 tablespoons minced fresh parsley
3/4 cup crumbled feta cheese
INSTRUCTIONS
1. Heat oil in a large nonstick skillet over medium-high heat. Add the onion and cook for 4-6 minutes, stirring until tender. Add garlic and seasonings, cooking for an additional minute. Stir in the tomatoes and wine (if using), and bring to a boil. Reduce heat and simmer uncovered for 5-7 minutes until the sauce thickens slightly.
2. Add shrimp and parsley, cooking for 5-6 minutes, stirring occasionally, until the shrimp turn pink. Remove from heat and sprinkle with cheese. Cover and let sit until the cheese softens.
