INGREDIENTS

½ teaspoon lemon juice
1 teaspoon lemon zest
5 oz / 142g cream cheese
1 egg, large
2 tbsp powdered sweetener
½ teaspoon vanilla extract

INSTRUCTIONS

1. In a mixing dish, combine all of the ingredients and stir with a fork or balloon whisk. Whisk to remove lumps.
2. Lightly grease or butter two ramekins. Divide the batter amongst ramekins. Microwave each ramekin for one minute on high. Make the tops glossy, and the middle jiggly. Microwave each ramekin for another 20 seconds.
3. Allow it cool on the counter for ten minutes before refrigerating for an hour. Enjoy directly from the ramekin or in a dish with berries, whipped cream, or a quick berry coulis.
