Mediterranean Spanakopita

Get wrapped up in the flaky, golden goodness of Mediterranean Spanakopita! This crispy pastry is packed with a savory mix of spinach, feta, and herbs, delivering a delicious taste of the Mediterranean in every bite. It’s a little slice of paradise, perfect for any occasion!

INGREDIENTS

2 large eggs, lightly beaten
1/2 cup crumbled feta cheese
1/4 cup finely chopped onion
1/4 cup mayonnaise
2 tablespoons snipped fresh dill
3/4 teaspoon seasoned salt
1/4 teaspoon pepper
15 sheets phyllo dough (14×9-inch size)
2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry
1 package (8 ounces) cream cheese, softened
1/2 cup butter, melted
Optional: Tzatziki sauce, lemon wedges and fresh dill sprigs

INSTRUCTIONS

1. Preheat oven to 425°F. In a large bowl, mix the first 9 ingredients.
2. Lay a sheet of phyllo dough on a work surface and brush with butter. Layer with 2 more phyllo sheets, brushing each with butter. Keep remaining phyllo covered with a damp towel.
3. Spread 3/4 cup of the spinach mixture in a narrow row along one long edge of the phyllo, leaving a 1-inch border. Fold the bottom edge over the filling, then roll up. Brush the end with butter to seal. Repeat with the remaining phyllo and filling.
4. Place the rolls seam-side down on a parchment-lined baking pan. Cut into 2-inch pieces (do not separate). Brush with remaining butter.
5. Bake for 12-15 minutes until golden brown. Serve with tzatziki sauce, lemon wedges, and dill sprigs if desired.
