  • 4 fillets atlantic salmon
  • 1 cup chopped red onion
  • 1 large sweet red pepper, chopped
  • 1 cup cherry cherry tomatoes
  • 1 lemon yields lemon juice
  • 1 dash salt
  • 1 dash pepper

Directions

  • Chop the onion, tomatoes and pepper in pieces and put in a baking dish for 30 minutes at 400 °F (200 °C).
  • Add the Atlantic salmon to the baking dish and spread the onion, tomatoes and red peppers over the top, and sprinkle with salt and pepper.
  • Pour juice of one lemon over the top and bake for 15-20 minutes.
