- 1/2 cup dry rolled oats
- 1 tsp baking powder (sodium aluminum sulfate, double acting)
- 1 tsp baking soda
- 1/2 tsp salt
- 3 medium bananas
- 3/4 cup granulated sugar
- 1 large white egg
- 1/3 cup butter
- 1 cup blueberries
Directions
- Melt butter then beat with egg, mashed banana and sugar.
- Mix dry ingredients in a separate bowl.
- Combine the two mixtures. Fold in blueberries gently at the end.
- Distribute evenly into muffin tins.
- Bake in preheated oven at 375°F for 17-20 minutes.
