  • 1/2 tsp salt
  • 1/2 cup dry rolled oats
  • 1 large white egg
  • 1 1/2 cups white flour
  • 1/3 cup butter
  • 3 medium bananas
  • 1 cup blueberries
  • 1 tsp baking powder (sodium aluminum sulfate, double acting)
  • 1 tsp baking soda
  • 3/4 cup granulated sugar

Directions

  • Melt butter then beat with egg, mashed banana and sugar.
  • Mix dry ingredients in a separate bowl.
  • Combine the two mixtures. Fold in blueberries gently at the end.
  • Distribute evenly into muffin tins.
  • Bake in preheated oven at 375°F for 17-20 minutes.
