  • 2 cups unbleached bread flour
  • 144 g monkfruit sweetener
  • 3/4 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp nutmeg (ground)
  • 4 medium bananas
  • 1/2 cup cottage cheese
  • 2 tbsps chia seeds
  • 1 tsp vanilla extract
  • 3 tbsps clarified butter ghee
  • 3 tbsps sunflower oil
  • 14 g semi-sweet style baking chips

Directions

  • Mash the bananas and beat with cottage cheese.
  • Grind chia seeds to powder and add 6 tablespoons water to make a paste.
  • Mix the wet ingredients and dry ingredients in separate bowls.
  • Combine the two mixtures until smooth. Fold in the chips.
  • Pour in a lightly greased baking dish.
  • Bake in an oven preheated to 350°F for 50-60 minutes.
  • Let cool before slicing.
