Ingredients

  • 2 1/2 tbsps organic coconut oil
  • 1 cup chopped young green onions
  • 2 large whole tomatoes
  • 1 bunch cilantro
  • 1/2 tsp cumin
  • 2 cups black beans (canned)
  • juice of 1 lime
  • 1 clove garlic

Directions

  • Rinse 1 can of organic black beans and add to bowl. Chop tomatoes, cilantro, and onions. Crush garlic and mix in a bowl.
  • Add remaining ingredients, mix in bowl. Squeeze 1 fresh lime over mixture.
  • Salt and pepper to taste. To add more heat add cayenne pepper to taste.
  • Serve over salad or my favorite, chop avocado on a plate cover with cooked cauliflower bits then put a cup of this salsa over top and enjoy!
