Ingredients

  • 16 oz red potatoes
  • 1/2 cup skim milk
  • 1/4 tsp garlic powder
  • 2 cups frozen broccoli florets
  • 10 oz boneless chicken breast strips
  • 1/4 second spray olive oil cooking spray
  • 1/4 cup grated parmesan cheese
  • 1 1/4 cups cheddar cheese soup

Directions

  • Slice potatoes 1/4" thick. Over medium heat, spray 2-3 seconds of cooking spray and add potatoes.
  • Cover and cook for 10 minutes, stirring occasionally.
  • Stir the soup, milk, garlic powder, broccoli and chicken into the skillet. Sprinkle with cheese.
  • Heat to a boil, then reduce the heat to low.
  • Cover and cook for 5 minutes or until the potatoes are fork-tender.
