- 16 oz red potatoes
- 1/2 cup skim milk
- 1/4 tsp garlic powder
- 2 cups frozen broccoli florets
- 10 oz boneless chicken breast strips
- 1/4 second spray olive oil cooking spray
- 1/4 cup grated parmesan cheese
- 1 1/4 cups cheddar cheese soup
Directions
- Slice potatoes 1/4" thick. Over medium heat, spray 2-3 seconds of cooking spray and add potatoes.
- Cover and cook for 10 minutes, stirring occasionally.
- Stir the soup, milk, garlic powder, broccoli and chicken into the skillet. Sprinkle with cheese.
- Heat to a boil, then reduce the heat to low.
- Cover and cook for 5 minutes or until the potatoes are fork-tender.
