  • 1 small head red cabbage
  • 3 tbsps olive oil
  • 2 tbsps sesame oil
  • 3 tbsps soy sauce
  • 1 clove garlic
  • 1/4 cup cilantro (coriander)
  • 2 medium green onions
  • 2 tbsps honey
  • 1 tbsp sriracha chili sauce
  • 1 oz dry roasted peanuts (with salt)
  • 1/4 cup rice vinegar
  • 4 cups fresh green beans
  • 32 oz boneless skinless chicken thighs

Directions

  • Whisk 1 tbsp olive oil, 2 tbsps soy sauce, 1 tbsp sesame oil, and 1 tbsp honey into a medium bowl. Add chicken and toss to coat.
  • Chop cabbage into wedges, place on one side of sheet pan with green beans, drizzle with remaining olive oil.
  • On other side of sheet pan, put chicken in single layer. Broil with rack in middle of oven at 325°F for 17-22 minutes.
  • Mix remaining sesame oil, soy sauce, and honey with rice vinegar, garlic, and sriracha, then set aside.
  • Remove sheet pan from oven, let chicken rest for 5-10 minutes.
  • Chop chicken and cabbage, toss with green beans and pour dressing over. Top with chopped cilantro, green onions, and peanuts.
