  • 1/2 head large cauliflower
  • 1/2 cup peas
  • 1 medium carrot
  • 2 cloves garlic
  • 1/2 cup onions, chopped
  • 3/4 cup liquid egg whites
  • 1 cup water chestnut slices
  • 3 tbsps soy sauce
  • 2/5 second cooking spray

Directions

  • Thinly slice carrot. Use a food processor or a cheese grater to grate the raw cauliflower, this should make about 3 cups of grated cauliflower.
  • In a large sprayed pan, on medium-high heat saute the onions and garlic until the onions start to change color, about 3-5 minutes.
  • Add peas, carrots, and water chestnuts. Cook for 3-5 minutes, carrots should start to soften.
  • Add cauliflower, soy sauce, and egg whites. Cook for 5-7 minutes.
