  • 2 large eggs
  • 1 cup light brown sugar
  • 1 cup canned pumpkin
  • 1 3/4 cups all-purpose flour
  • 1 cup semi-sweet chocolate chips
  • 2 tsps pumpkin pie spice
  • 3/4 tsp salt
  • 1/2 cup canola vegetable oil
  • 1/2 tsp baking powder (sodium aluminum sulfate, double acting)
  • 1 tsp baking soda
  • 1/2 cup granulated sugar

Directions

  • Beat the eggs with sugar and mashed pumpkin.
  • Add the oil and mix well.
  • Gradually add the dry ingredients and stir.
  • Transfer to a lightly greased loaf mold.
  • Bake in an oven preheated to 350°F for 50-60 minutes or until the toothpick comes out clean.
  • Let cool before slicing.
