- 1 3/4 cups all-purpose flour
- 1 cup light brown sugar
- 1/2 cup granulated sugar
- 1/2 tsp baking powder (sodium aluminum sulfate, double acting)
- 2 large eggs
- 1 tsp baking soda
- 3/4 tsp salt
- 1 cup semi-sweet chocolate chips
- 1 cup canned pumpkin
- 2 tsps pumpkin pie spice
- 1/2 cup canola vegetable oil
Directions
- Beat the eggs with sugar and mashed pumpkin.
- Add the oil and mix well.
- Gradually add the dry ingredients and stir.
- Transfer to a lightly greased loaf mold.
- Bake in an oven preheated to 350°F for 50-60 minutes or until the toothpick comes out clean.
- Let cool before slicing.
