Ingredients
- 1/4 cup olive oil
- 1 small red onion
- 1 cucumber (with peel)
- 1 medium red sweet pepper
- 2 tsps lemon juice
- 2 tbsps minced garlic
- 1 tbsp red or cayenne pepper
- 2 cups, dry, yields quinoa (cooked)
- 1 tsp cumin
Directions
- Cook quinoa as per package instructions. Let cool.
- Slice vegetables into small 1/4” pieces.
- Mix all ingredients in a large bowl.
- Let sit overnight in fridge or until cold.
