Ingredients

  • 2 cups of couscous
  • 30 oz black beans
  • 14 oz corn
  • 1/2 cup cilantro, chopped
  • 1 1/2 cups red onion, chopped
  • 2 tbsps olive oil
  • juice of 1 lime
  • 1 tsp cumin
  • 1/2 tsp red pepper
  • 1/2 tsp salt
  • 1 tsp black pepper

Directions

  • Drain and rinse black beans. Drain corn and combine in a medium-large bowl.
  • Add olive oil and lime juice.
  • Chop onions and cilantro and combine with beans and corn. Cook couscous while chopping.
  • Add salt, black pepper, red pepper and cumin.
  • Stir in cooked couscous a small amount at a time.
