  • 1 lb cottage cheese, lowfat
  • 12 large eggs
  • 1/2 tsp pepper
  • 1 dash salt
  • 1 cup strips or slices carrots
  • 1 1/2 cups cauliflower
  • 1 cup chopped or sliced tomatoes
  • 1 1/2 cups flowerets broccoli
  • 2 cups shredded monterey jack cheese, low fat

Directions

  • Sauté vegetables in a non-stick skillet until lightly browned.
  • While vegetables are cooking up, mix eggs, cottage cheese, monterey jack cheese, salt, and pepper in a large mixing bowl. Set aside.
  • When the vegetables are done, put them into a greased glass casserole dish.
  • Pour egg mixture on top, evenly spread across the top of the vegetables.
  • Bake at 400°F (200°C) for 45 to 60 minutes, until eggs are set and the top is lightly browned.
