Ingredients

  • 2 slices whole wheat bread
  • 1 medium lettuce leaf
  • 1 medium tomato slice
  • 3 tbsps egg substitute
  • 1 tsp vegetable oil spread

Directions

  • Toast the whole wheat bread.
  • Meanwhile, heat 1 tsp vegetable oil spread in a small frying pan. When hot, add egg substitute.
  • Gently saute the egg substitute until it forms an omelette. Remove from the heat.
  • Layer the lettuce, omelette, and tomato on 1 piece of toast. Top with the remaining toast, slice, and enjoy.
