  • 1 cup chopped zucchini chunks
  • 1 cup whole button mushrooms
  • 1 cup chopped red pepper chunks
  • 1 cup chopped green or yellow pepper chunks
  • 1 cup cherry cherry tomatoes
  • 1/4 cup zesty italian salad dressing, reduced fat
  • 2 tbsps parmesan cheese, grated

Directions

  • Preheat grill to medium-high heat. Toss vegetables and tomatoes with Italian dressing.
  • Place in center of 18" long piece of heavy duty foil (or use a double layer of regular foil). Bring up the sides. Double fold top and ends to seal packet, leaving room for heat circulation inside.
  • Grill for 8 to 10 minutes or until vegetables are crisp-tender, turning after 4 minutes.
  • Cut slits in foil to release steam. Open packet, sprinkle vegetables with parmesan cheese.
