Ingredients
- 500 g cooked prawns, peeled
- 2 tbsps olive oil
- 3 cloves garlic, finely chopped
- 1/4 red chili, finely chopped
- 1/4 cup flat leaf parsley, chopped
- 1 tbsp lemon rind
- 40 g butter
Directions
- Heat oil and butter in pan over medium heat.
- Add garlic and chili stirring for 2-3 minutes.
- Add parsley, lemon rind, and salt and pepper and combine.
- Add prawns - heat through (don't leave them in too long otherwise they become rubbery).
- Squeeze some lemon juice over the prawns.
- Serve with salad and enjoy.
