Ingredients

  • 1 cup chopped or sliced tomatoes
  • 1 cup diced potatoes
  • 1/2 cup pieces or slices mushrooms
  • 2 cups tomato sauce
  • 10 oz pinto beans
  • 10 oz red kidney beans
  • 16 oz lean ground turkey
  • 4 tbsps olive oil
  • 1 medium onion
  • 2 tsps garlic

Directions

  • Heat the olive oil on the stove top in a pan large enough for the meat.
  • Add half the onion and all of the garlic to the hot oil. Let simmer for a few minutes until the onions become clear.
  • Add the ground meat and cook until brown. Season with salt and pepper.
  • Dice and slice tomatoes, potatoes, mushrooms and any other vegetables you may have lying around the fridge.
  • In either a crock pot or large stove top pot add the tomato sauce, beans and vegetables (including the remaining onion). Add a jalapeno or haberno pepper for spice if preferred. Season with salt, pepper, oregano and red pepper flakes.
  • Add all ingredients to the pot. Heat until it is boiling then reduce to low.
  • Chili is done when the potatoes are cooked, usually 45-60 minutes stirring every 10 minutes. Enjoy!
  • Note: can use lean ground beef instead and can be made in an all day crock or on the stove top.
